- 1/2 cup milk (we love almond milk!)
- 1 or 2 large egg
- Coconut oil for frying
Instructions:
1. In a blender, mix together the peeled banana, eggs, oats, baking powder until the mixture that you desired is so smooth. Adjust the texture of the pancakes based on your little one’s preference. If they enjoy a smoother texture, blend the oats into a finer consistency. For those who like a bit of texture, leave the oats a bit more course. Let the batter stand for 10-20 minutes until it thickens slightly.
2. Heat a non-stick frying pan over medium heat with coconut oil. Spoon the batter onto the pan, frying until both sides turn golden brown. Cook the mini pancake bites on medium heat for 1-2 minutes on each side. Play around with the size of the pancakes.
