Im so excited to share one of my favourite go to Blueberry Banana Egg Pancakes recipe that is so easy to make. These pancakes are not only delicious but also packed with nutritious ingredients that will leave you feeling satisfied and energise making them the perfect breakfast or brunch option for busy mornings or lazy weekends. Let’s dive into this simple recipe that I can’t wait for you to try.
Single Small Pancake Recipe
For those times when you just need a little treat, this single serving pancake recipe is perfect. Using just a couple of teaspoons of flour, for a small batch or a cup of flour for a larger batch, depending on how many servings you need, you can easily scale the recipe up or down.
What makes these pancakes so special is their simplicity and for me I love anything that is so easy and especially healthy with protein. So with just a handful of basic ingredients, you can whip up a batch of fluffy pancakes in no time. Here’s what you’ll need:
Ingredients:
- 1 or 2 bananas
- 1 or 2 eggs
- 1/2 cup blueberries
- 1 cup or couple teaspoons organic flour (Optional depend how many servings)
- Extra virgin oil for cooking
- Add chia seeds, cinnamon (Optional)
Instructions:
- Mash the Bananas: In a mixing bowl, mash the ripe bananas until smooth. This will add natural sweetness and moisture to your pancakes.
- Add Eggs and Baking Powder: Crack the eggs into the bowl with the mashed bananas. Then, add the baking powder and whisk everything together until well combined.
- Mix in Organic Flour: Gradually add the organic flour to the banana-egg mixture, stirring until a smooth batter forms.
- Add Blueberries into a bowl
- Heat the Pan: Heat a non-stick skillet over medium heat. Add a small amount extra virgin oil to prevent sticking.
Cook the Pancakes: Pour small portions of the batter onto the skillet to form pancakes. Cook for 2-3 minutes on each side, or until golden brown and cooked through.
Serve and Enjoy: Once cooked, transfer the pancakes to a plate. Serve them warm with your favorite toppings, such as extra blueberries, sliced bananas, or a drizzle of honey. I use organic date syrup making it a healthier alternative for sweetening recipes.
