I’m excited to share another favorite of mine in my kitchen – the Egg, cherry tomato, and roasted asparagus, There’s just something about this combo that I really love. The creamy eggs, with their velvety texture, tie it all together into a masterpiece. This is just a simple recipe to make,
Ingredients:
- 1 or 2 large eggs
- 1 cup cherry tomatoes, halved
- 1 bunch of fresh asparagus, trimmed
- 1 Tbsp extra virgin olive, butter or avocado oil
- Sea Salt and pepper to taste
- Optional: Fresh herbs like onion or parsley for garnish
Step 1: Asparagus Elegance
Preheat the oven to 400°F (200°C). Lay out the trimmed asparagus on a baking sheet, and drizzle them with olive oil. I do put lots of oil as it will it a nice golden look. Roast in the oven until they achieve a perfect tenderness and a slight caramelised char, usually around 15-20 minutes.
Step 2: Tomato Burst
While the asparagus is basking in the oven’s warmth, let’s turn our attention to the cherry tomatoes. In a pan, sauté them with a touch of olive oil until they start to soften and release their delightful juices. This step brings a burst of sweetness to our savory delight.
Step 3: Scrambled Egg
Create a cozy space in the pan for the eggs. Crack them open and gently scramble, allowing them to weave their magic with the tomatoes. The eggs bring a creamy texture that binds the dish together, turning it into a delightful crescendo of flavors.
