I’m thrilled to share with you my all-time favorite creation – Sourdough Toast with Avocado and Egg. This delightful dish has become a morning ritual for me and for lunch, and trust me, the flavors are nothing short of amazing. Join me on this journey as I spill the secrets to creating the perfect combination of crispy, creamy, and savory goodness on a plate.
Ingredients:
- 1 or 2 slices of sourdough bread
- 1 ripe avocado
- 1 or 2 eggs
- Salt and pepper, to taste
- Optional toppings: Chili flakes, cherry tomatoes, Onions, chopped herbs (such as parsley or chives)
- Chia Seeds
- A handful of Apples or Strawberries of your choice to have on the side.
Instructions:
1.Toast the Sourdough:
Toast the sourdough slices to your desired level of crispiness. I’ve found that toasting it just right, achieving that golden brown crunch, it taste just amazing! I’m obsessed with the creamy texture of the avocado, mash it up with a fork which is covered up with the egg via photo, a pinch of salt and pepper enhances the flavors.
2. Prepare the Avocado:
While the bread is toasting, cut the ripe avocado in half and remove the pit, scoop the avocado flesh into a bowl and mash it with a fork, season the mash avocado with salt and pepper, for the salt I use Celtic salt which I love because its has lots of minerals, calcium, copper, zinc, iron, potassium—active enzymes, micronutrients than the regular salt.
3. Cook the Eggs
In a non-stick skillet over medium heat, crack the eggs and cook them to your liking (fried, poached, or scrambled). I like to have mine scrambled and fluffy which gives it a nice texture. I like to add alot of seasons on my egg with salt and pepper.
4.Assemble the Toast:
Spread the mashed avocado evenly over the toasted sourdough slices delicately place the cooked eggs on top of the avocado. This step allows the warm, savory eggs to nestle perfectly into the velvety embrace of the avocado, creating a beautiful blend of textures and flavours.
5.Add Optional Toppings:
If desired, sprinkle chili flakes or chopped herbs over the eggs for extra flavor or a sprinkle of fresh herbs such as parsley or chives for a burst of freshness. I also like to add chia seeds for the extra Omega 3 mix and chopped cherry tomatoes, diced onions until they caramelise will add a sweet and savory dimension to your dish.
6: Serve and Enjoy:
